Healthy and nutritious lasagne for the family

I don’t cook lasagne all that much, but when I do I always wonder why I don’t cook it more often! This recipe is actually really tasty and Rupert absolutely loved it too – I have to use gluten free lasagne sheets though as he is off wheat at the moment.


Ingredients:

  • 1 x packet of lamb mince
  • 1 x aubergine
  • 1 x can of chopped tomatoes
  • 1 x onion
  • 1 x courgette
  • 1/2 packet of sun dried tomatoes
  • lasagne sheets (gluten free optional)
  • 1 x tbsp flour
  • 1 x knob of butter
  • semi-skimmed milk
  • Mature cheddar cheese (optional)

How to make:

White sauce:
  • First whisk together the butter and flour in a saucepan over a low heat until a paste is formed
  • Add the milk and additional flour until required consistency is formed
Meat sauce
  • Chop all the vegetables into small bitesized chunks
  • Bung all the ingredients into a large saucepan and cook over a low heat until the meat has turned brown and the vegetables are soft
How to compile the lasagne

This is like such a dilemma for me as i’ve previously never got this quite right – but the last time I did this, THIS WORKED!!!!!

  • First do a this layer of the meat sauce
  • Then lasagne sheets
  • Then some white sauce
  • Then another thick meat sauce layer
  • Then another layer of lasagne sheets
  • Add the rest of the white sauce on top
  • Grate some cheese on top if you fancy

Then put in the oven and cook for about 35mins on 180.
