Asian style Mackerel and noodle stir fry

Oh my gosh this meal is heaven! Sorry for gushing but this is literally the only way that you could possibly start a blog post about this! John made this for me one week and although I did turn my nose up at it initially (sorry John!), as soon as I ate it I knew that it would become a family staple!

Time to prepare

From start to finish this takes about 15-20 minutes which is just amazing!

What do you need – these ingredients serves 2

  • 2-4 smoked mackerel fillets (we have either 2 or 1 each depending on how hungry we are!)
  • 1 pepper (colour of your choice!)
  • Handful of mushrooms
  • 2 portions of noodles
  • Honey
  • Soy sauce
  • Knob of fresh ginger, peeled and chopped finely
  • Fresh coriander

How to prepare:

  • Put the smoked mackerel into a heated oven to cook for about 15-17 mins
  • Whilst that is cooking chop the peppers and mushrooms up
  • Boil the kettle for the noodles
  • Put 1 tablespoon of soy sauce and honey into a glass and mix
  • Stir fry the peppers and the mushrooms (3-5 mins) with a bit of coconut oil
  • When everything is cooked and prepared, layer everything on top of each other and pour the soy sauce and honey over it all and mix on the plate
  • Enjoy!
